Kangaroo has a very strong ‘gamey’ flavour which makes it ideal for the intense flavours characteristically found in Salami. The robust flavour profile also makes it an ideal pairing for Chilli. Due to the lean nature of the Kangaroo we introduce natural fat as part of the curing process.
Serve with a creamy soft flavoured cheese such as Brie and a big heavy flavoured drink such as Shiraz, Oaked Chardonnay or a big ‘hoppy’ IPA (India Pale Ale).
Ideally served with: Your weekend cheese board or your favourite pasta dish.
