Inspired by a wild boar and truffle salami of rural Italy, this Tartufo is produced using the finest quality Australian pork and flavoured with the shavings of black truffles sourced in Toscana, Italy. The select cuts of pork are combined with the Italian truffles and then fermentation and cured in a cycle designed to mirror the climatic conditions of a European Autumn. This provides the Tartufo with is pungent flavour, firm texture and an aroma that is reminiscent of a moist forest floor.
